McDougall-style, Mexican-inspired, green and gold Starchy Stuff! The haze is from steam; I snapped the photo just after plating from the skillet. This dish includes barley, potatoes, scallions, yellow pepper, chili powder, and baby spinach.
The Starchy Stuff was served with a side of diced jalapenos (in the little jar below) and carrots and guacamole. Dessert was a dish of Texas red grapefruit segments.
